Tasty Tuesdays: Eggnog with a Twist

This week’s Tasty Tuesdays is all about the Eggnog. I know this is a drink that can be a hit or a miss with people. I have to admit, I wasn’t a fan when I was younger, but not I can’t get enough of it lol.

I found some cool eggnog recipes…with a little twist.

Peppermint Eggnog

  • 6 large eggs
  • 2 large egg yolks
  • 1/2 cup sugar
  • 2 tablespoons more sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon pure peppermint extract
  • 1 tablespoon pure vanilla extract
  • 4 cups whole milk
  • 12 peppermint candy canes, broken into pieces
  • 3 ounces white chocolate, coarsely chopped
  • 1/2 cup heavy cream
  • Peppermint sticks, for garnish
  1. Prepare an ice-water bath; set aside. Whisk together eggs, egg yolks, sugar, salt, and the extracts in large saucepan over medium-low heat until combined. Pour in milk in a slow, steady stream, whisking until fully incorporated. Raise heat to medium. Cook, whisking constantly, until mixture registers 160 degrees on an instant-read thermometer and is thick enough to coat the back of a spoon, 30 to 35 minutes.

  2. Pour milk mixture through a fine sieve into a medium bowl. Set bowl in ice-water bath; let mixture cool completely. Transfer custard to an airtight container, and refrigerate at least 4 hours or up to overnight.

  3. Process candy canes in a food processor until finely crushed. Sift in a strainer to discard dust. Transfer to a shallow dish.

  4. Melt chocolate in a heatproof bowl set over a pan of simmering water. Let cool 5 minutes. Dip rim of each cup into melted chocolate, then crushed peppermint. Refrigerate until set, about 5 minutes.

  5. Remove custard from refrigerator; set aside. Put cream into the bowl of an electric mixer fitted with the whisk attachment; mix on medium speed until stiff peaks form. Fold into cold custard until combined. Fill cups with eggnog. Sprinkle with crushed peppermint, and garnish with peppermint sticks; serve.

Eggnog with Irish Creme

12 large eggs, lightly beaten
4 cups half-and-half
4 cups milk
1/4 teaspoon salt
4 1/2 cups chilled strongly brewed coffee
3 cups Irish cream liqueur
2 teaspoons vanilla extract
2 cups whipping cream
Garnishes: additional whipped cream, thin chocolate mints

1. Gradually add sugar to eggs in a large glass mixing bowl, whisking until blended. Set aside.

2.Stir together half-and-half, milk, and salt in a Dutch oven over medium-low heat. Cook, stirring occasionally, 12 to 15 minutes or just until mixture begins to bubble around edges of pan. (Do not boil.)

3. Gradually stir half of hot milk mixture into egg mixture. Stir egg mixture into remaining hot milk mixture in Dutch oven.

4. Cook mixture over medium-low heat, stirring constantly, until mixture slightly thickens and a thermometer registers 160° (about 25 to 30 minutes). Remove from heat, and stir 1 minute. Pour mixture through a fine wire-mesh strainer into a serving bowl. Stir in coffee, Irish cream liqueur, and vanilla; let cool 1 hour. Cover and chill at least 4 hours.

5. Beat whipping cream at high speed with an electric mixer until soft peaks form. Fold whipped cream into chilled eggnog, and garnish, if desired.

I have to add that I love these recipes, but I also keep a bottle of store bought eggnog on hand for those days I don’t want to make it from scratch. I also keep some tasty treat on deck to add as well. I like to add:

  • Vanilla
  • Nutmeg
  • Dark liquor (rum is  quite tasty)

Tasty Tuesdays: Frostbite Cocktail

Hi everyone!!!!

It’s Tasty Tuesday, and today I am feeling the holiday spirit! I am thinking about hosting a holiday party this month (I can’t believe it’s already December 1st), so I went exploring on one of my all-time favorite sites…Pinterest! I was looking for some cute and tasty drinks that I could serve for the party and came along this awesome drink on Buzzfeed.com

The Frostbite Cocktail #1:

This drink is colorful, festive, and delicious I may add. I had to try it out for myself (I had to make sure it tasted as good as it sounded lol).

1½ oz tequila
 1 oz cream
½ oz blue curaçao
1 oz chocolate liqueur
½ oz crème de menthe

Shake and strain into an ice-filled glass.

There are several other festive drinks located on the buzzfeed as well.

Frostbite Cocktail #2:

Here is another version of the drink that I found on thisweekfordinner that I am going to try.

3 ounces Sierra Mist Natural
1 ounce Blue Curacao
1 ounce Coconut Vodka
Fresh mint
1 ounce Pineapple juice
Fresh blueberries (optional)
  1. In a shaker filled with ice, mix coconut vodka and pineapple juice
  2. Add blue curacao, fresh mint and blueberries (optional)
  3. Shake all ingredients well and strain into a large glass filled with ice
  4. Top with Sierra Mist Natural
  5. Garnish with fresh blueberries for a holiday twist (optional)

Frostbite Mocktail:

For those  who don’t drink or want a drink for the kiddos, here is a mocktail that is just as delicious and surely will be a huge it  🙂

2 ounces of White grape juice
Fresh blueberries
Fresh mint
1 ounce Pineapple juice
1 ounce Lime juice
  1. In a shaker filled with ice, mix fresh lime juice and pineapple juice
  2. Add white grape juice, mint and blueberries
  3. Shake all ingredients well and strain into a large glass filled with ice
  4. Top with Sierra Mist Natural
  5. Garnish with fresh blueberries for a holiday twist (optional)

Tasty Tuesdays: Kashmir Indian Resturant

Hey everyone! I am back with another Tasty Tuesday! This weeks spotlight is one of my FAVORITE restaurants named Kashmir.

Kashmir is a family owned Indian restaurant located in the Highlands area of Louisville, KY. The location is prefect because it’s surrounded by numerous coffee shops, clothing stores, and other International restaurants. The building is a small renovated house with great seating inside and out. When the weather is warm, My family and I love to sit outside on the patio and people watch while we eat.

The food is amazing! The family uses their own recipes to create these wonderful and delicious meals. Their menu is catered to everyone, especially vegetarians.My favorite is the Chicken Jafrazel. I also enjoy the Meat Samosas as an appetizer.

The customer service and atmosphere is perfect for family outings. I take my family as often as we can. If we can’t make it, we also order take out. I highly recommend you try this restaurant is you are ever in the Highlands area. You will not regret it!

Tasty Tuesdays: Super Chefs (Review)

My Husband and I try to go to a different restaurant at least once month. I love to eat foods from other countries, but it’s also nice to have some delicious comfort foods. Today, we decided to try this restaurant we’ve heard great reviews on called Super Chefs.

Super Chefs was opened during the summer of 2012 by childhood friends Darnell Ferguson and Ryan Bryson. It’s located in The St. Matthews area in a great area (106 Fairfax Ave.) Ferguson used his culinary skills from Sullivan University and Bryson had the Business aspect since he earned his Business Degree from the University of Findlay.

At Super Chefs, they focus on intense flavors in their uniquely named dishes. Their themed is “Superhero’s”, so from the food to the atmosphere, you get that feeling.

WHAT DID I THINK?

The food was great! I had the Super Chef Omelet with hash browns and a pancake while my husband had the wings and waffles, eggs, and turkey bacon. I must admit, I was surprised by the appearance of the food. It was beautiful! Not only was it presented nicely, but it was delicious.

The customer service was excellent and the establishment was clean and inviting. If you live the in the Louisville area, I highly recommend that you try it out for yourself. You will not be disappointed!
